The majority of my chocolates are made with Guittard chocolate:

Dark 57% 'Etienne Prestige'
Milk 38% 'Soleil d'Or'
White 30% 'Mystic'

The various colored chocolate candies are made with Wilton Candy Melts and are mostly vanilla flavored.  Ask me about frosted sugar cookies and bar cookies.
